KHUS-KHUS MILK
Milk is considered as a wholesome food. It is rich in calcium, and thus being important for bones, milk also contains more than 9 other vital nutrients which include protein, carbohydrates, vitamins, minerals and fats.
Khus-Khus milk is prepared with white poppy seed, makhana, almonds and milk. It is an incredible source of heat and energy especially for the cold winter nights and I’ve been drinking this milk almost every night before going to bed.
The Khus- Khus milk is made with milk, makhana, a handful of warming spices (cardamom, turmeric), saffron, and yes the poppy seeds and almond paste.

Makhana & Saffron is my addition to the recipe with numerous heath benefits . Khus – Khus milk tastes amazing, distinctly warm, earthy with slight notes of sweetness of jaggery which is completely optional one.
When it comes to a Diabetic patients Poppy seeds occupy an integral place in a diabetic’s diet. The presence of manganese in the seeds helps in the treatment of diabetes and helps in the production of the protein collagen that protects the bones from severe damage. Being rich in copper and calcium, poppy seeds help in improving bone health. Makhana, being low glycaemic foods, helps in managing blood sugar levels. The glycaemic index of makhana is significantly lower than foods like rice, bread, etc. Moreover, their low sodium and high magnesium content makes it beneficial for the person suffering from diabetes and obesity. Saffron helps in regulating the blood sugar level and also improves the glucose uptake by the muscles and is often said to be the alternate of sugar for people who have Type 2 diabetes. One of the major components of Pure Saffron, is Crocetin which helps to fight the insulin problem in diabetes patients. This concoction also helps to fight with depression and drinking it before bedtime allows to have a smooth and sound sleep- which is also an essential health routine. Almonds, are nutritionally beneficial for most people, and are especially good for people with diabetes. It reduce the rise in glucose (blood sugar) and insulin levels.

Ingredients:-
Poppy seeds,Fox seeds,Milk,Almond,Saffron, Turmeric, Ghee, Jaggery or Honey ( optional).
Instructions:-
ü Soak almonds in water for 3 - 4 hours or till it becomes easy to remove the skin of the almonds.
ü In a separate bowl, soak the khus khus in 1/3 Cup of water overnight.
ü Next day strain the soaked khus khus in a metal strainer. Drain the excess water.
ü In a small jar of the grinder, blend together khus khus and peeled almonds.
ü Grind to a smooth paste. If required, use 1 - 2 tablespoon of water to grind the paste.
ü This might take a while due to the small quantity of the ingredients. Scrape the paste from the sides of the blender, stir and grind is the trick.
ü Transfer the khus khus paste to a bowl.
ü Heat ghee in a pan.
ü Add the khus khus paste and saute over low heat.
ü Keep cooking the paste till it turns light brown in color and starts leaving sides of the pan. This might take anywhere between 10 - 15 minutes. During all this time, the paste requires stirring at regular intervals.
ü Next add the cardamom powder, Makhana/fox seeds, milk and turmeric powder. Stir and bring to a boil once over high heat.
ü Reduce the heat to low and allow the milk to simmer uncovered for 10 more minutes.
ü Add Jaggery or honey to taste and saffron to khus khus milk. Stir to combine.
ü Taste and adjust the sweetness accordingly.Turn off the heat.
ü Serve warm.
